Ingredients
Filling
- 2 cups shredded cooked chicken (rotisserie works great)
- 2/3 cup of your favorite BBQ sauce
Cornbread
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/3 cup melted butter
- 2 large eggs
- 1/2 cup shredded cheddar cheese
Instructions
- 1.
Heat the oven to 400°F (200°C). Grease a 12-cup muffin tin well.
- 2.
Toss the chicken with BBQ sauce in a bowl and set aside.

Whisk cornmeal, flour, sugar, baking powder, and salt in a large bowl. In another bowl, whisk milk, melted butter, and eggs. Stir wet into dry just until combined, then fold in the cheddar.
- 4.
Spoon about 1 1/2 tablespoons of batter into each muffin cup. Add a heaping tablespoon of BBQ chicken to the center, then cover with the remaining batter.

Make It Special!
- Serve with extra warm BBQ sauce and honey butter on the side.
- Swap the chicken for leftover pulled pork or brisket.
- Make ahead: bake a day early and rewarm at 350°F for 8 minutes.
