Ingredients
- 12 baby gold potatoes (about 1 1/2 lb), halved
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1/2 cup sour cream
- 2 tbsp chopped fresh chives
Instructions
- 1.
Heat the oven to 425°F (220°C). Toss potato halves with olive oil, salt, and pepper. Arrange cut side down on a baking sheet.
- 2.
Roast until tender and golden, 22–25 minutes. Let cool 5 minutes.
- 3.
Using a small spoon, scoop a shallow well out of the cut side of each potato. Turn cut side up. Trim a thin slice off the bottom if needed so they sit flat.
- 4.
Fill each well with cheddar and a few bacon crumbles. Return to the oven until the cheese melts, 5–7 minutes.
- 5.
Top each bite with a small dollop of sour cream and a sprinkle of chives. Serve warm.
Make It Special!
- Set up a 'potato bar' with extra toppings: jalapeños, BBQ pulled pork, or broccoli and cheese sauce.
- Pipe the sour cream from a zip-top bag for a neat, bakery look.
- Make ahead: roast and scoop the potatoes a day early; fill and bake just before serving.
