Watermelon, Feta & Mint Skewers

Sweet, salty, cool, and gorgeous — a no-cook summer showstopper.

Watermelon, Feta & Mint Skewers

Juicy watermelon and creamy feta are a classic pairing for good reason. Threaded onto skewers with fresh mint and finished with a balsamic drizzle, they look like confetti on a platter.

20 skewers

Ingredients

  • 1/4 seedless watermelon, cut into 40 one-inch cubes
  • 8 oz (225 g) block feta cheese, cut into 20 cubes
  • 20 fresh mint leaves
  • 2 tbsp balsamic glaze
  • Flaky sea salt and cracked black pepper
  • 20 short cocktail skewers

Instructions

  1. 1.

Pat watermelon cubes dry with paper towels so they don't weep onto the platter.

  2. 2.

Onto each skewer, thread one watermelon cube, a mint leaf, a cube of feta, and a second watermelon cube.

  3. 3.

Arrange on a chilled platter. Just before serving, drizzle with balsamic glaze and sprinkle lightly with flaky salt and pepper.

Make It Special!

  • Swap mint for basil, or add a cube of cucumber for extra crunch.
  • Serve on a bed of crushed ice on hot days.
  • Make ahead: assemble up to 4 hours early and refrigerate; drizzle glaze right before serving.
